Vermont Lima Bake

Who doesn't love lima beans? Then this recipe is not for you.

1 lb [or/and]? 2 1/2 cups large dry limas
1 large onion quartered
8 whole cloves
6 cups water
1/2 cup maple syrup
1/2 cup catsup
2 tsp Worc sauce
1 tsp salt
1/4 teasp pepper
1 bay leaf
1/4 lb salt pork cut in 1 in pieces

Rinse beans.
stud onion with cloves
add water and onion boil 5 mins
Let stand 1 hour
add maple syrup and rest of ingredients
cover and bake 2 1/2 hour at 350.
uncover and bake 30 min more, stirring once or twice.
remove bay leaf

Crabmeat Casserole

What's really neat when you read Grammy's recipes, is you realize-- she knew how to cook. Many of her recipes are simply lists of ingredients with a couple of notes. She often doesn't have oven temp or cooking time as is the case with this casserole. I guess we have to learn by trial and error :)

Crabmeat Casserole
8 oz crabmeat
4 oz cubed cheese
1 cup skim milk
4 oz diced bread
1 tsp. mustard
8 tsp diet margarine
sprinkle paprika

Soak bread in milk.

Thats all to the recipe, but of course we now have to decide what temp and length of time to cook it. Sometime I'll look up a similar recipe and post it...unless someone else gets to it before I do.

Cookies

This is a funny little recipe. It's written down by Grammy. It looks so very easy. I am certainly going try it.

Cookies
1/2 cup sour cream
1 1/2 cup flour
1 cup butter.

[Mix].
Let cool [refrigrate?].
roll, and cut.
put sugar on top.
bake.

Pickles Fresh

I would have called these Fresh Pickles, but this recipe was written in Grammy's own hand, and I am copying it as it is written. I have had Grammy's Pickles Fresh and they are delicious.

Pickles Fresh

1 cup water
1 cup or a little more of sugar
1/4 cup white vinegar

Fill large jar with sliced cukes and onions [cover with vinegar water].

Keep cold over night.

Mud Hens

One day when I was visiting Grammy and Grandpa for summer vacation, Grammy decided to make Mud Hens. I have never forgotten them. Here is the recipe we found in her box.

Mud Hens
1 whole egg
1 egg yolk
1/2 cup butter
1 cup sugar

Mix together.

Add:
1 1/2 cup flour
1 tsp baking powder
salt
vanilla

Mix well.

Spread on pan, large (greased cookie sheet?)

beat an egg white stiff
add 1 cup brown sugar
spread on top and bake in moderate oven (275?)
